On a hot summer day, these low-carb ice cream sandwiches are the ideal treat. It’s entirely up to you whether you want chocolate chip ice cream or sprinkle-filled edges.
This recipe is also excellent for gluten-free people since it utilizes a grain-free chocolate cookie foundation. You may now enjoy all of the delectable chocolate taste without having an upset stomach.
You’ll want to start with the chocolate cookie foundation for these keto ice cream sandwiches. The wet ingredient for these low carb cookies consists of butter, eggs, liquid stevia, vanilla extract, and dark chocolate/or chocolate chips (finely chopped).
Then you’ll need almond flour (finely crushed), coconut flour, erythritol, pink salt, and baking powder for the ice cream sandwich cookie dry ingredients.

If you don’t have any chocolate, you may replace it with 2-4 tbsp cocoa powder; however, you may need to add more nut milk to thin down the batter.

Sandwiches with Keto Ice Cream
It’s time to start baking now that we’ve gathered all of our ingredients. We’ll start by making the cookie foundation for our ice cream sandwiches.
Preheat the oven to 350 degrees Fahrenheit and prepare one 9-inch brownie pan with parchment paper to keep it from sticking.
Next, whisk together your dry ingredients, except the erythritol, in a medium-sized mixing basin.
Melt the butter and dark chocolate together in a large mixing dish. To avoid burning, melt the chocolate in 15-second intervals. Once melted, add the liquid stevia, erythritol, and vanilla extract, if desired. To dissolve part of the erythritol, mix well.
You may now add the eggs to the butter and chocolate mixture once the erythritol has cooled down.
Mix the wet and dry ingredients together well to break up any clumps.
Pour the cookie dough into the baking dish and level it out with a spatula; the mixture will be similar to brownie batter.
Allow the cookies to cool for 20 minutes after baking for 10-12 minutes. After that, place them in the freezer for another hour.
Fill your softened pint of ice cream between the halves of the cooled biscuits. To enable ice cream edges to develop, leave the bottom half of the cookies in the parchment paper coated pan. To form a seal in the pan, place the top half of the cookies on top and gently push down.
Freeze for a further 1-2 hours before cutting into four ice cream sandwiches. We prefer to make them in a pan and then remove them one by one.
Low-Carb Ice Cream Sandwiches: How to Store Them
Low-carb ice cream sandwiches keep well in the freezer, but they do have a shelf life, just like any other delicacy. These almond flour cookies can keep for 2 months if covered in parchment paper and then wrapped in aluminum foil after slicing. You can also freeze the parchment paper aluminum wrapped ice cream sandwich recipe for up to 3 months in a gallon zip lock bag.

- In a medium-sized mixing bowl, combine all of the dry ingredients except the erythritol.

- Remove the top half of the cooled cookies from the pan and slice them in half. Spread the softened ice cream over the bottom half of the brownie pan, which is still coated with parchment paper.
- Place the top layer of cookies on top of the ice cream and gently push down to join the layers. Return to the freezer for another 1-2 hours before cutting into four ice cream sandwiches.
